Baked fish and potatoes~peixe assado com batatas


Ingredients:
2½ lbs of fresh fish or Wild Salmon, with no skin
 cups of olive oil
6 large potatoes sliced
2 medium-sized onions sliced thin
4 cloves of garlic chopped fine
2 tomatoes sliced
2 teaspoons of fresh parsley chopped course
1 bay leaf
half lemon juiced
1 teaspoon of Kosher salt
½  teaspoon of black pepper

On the bottom of a baking dish, layer the whole pan with the onions, half of the potatoes, half of the tomatoes, the parsley, bay leaf, half of the olive oil. Next layer on the salmon, salt, pepper, lemon, garlic, parsley. Finally add the rest of the potatoes, onions, tomatoes, parsley, olive oil.
Bake at 375 degrees for 35 minutes. Enjoy!
