Chicken Soup ~ Canga de Galinha
Ingredients:
4 ½ cups of water
½ a teaspoon of Kosher salt
2 chicken thighs
1 small onion
2 cloves of garlic
1 stock of celery
1 stock of large carrot
½ a cup of pasta (ex. stars)
Lemon and mint are optional
In a large pot add, the water, salt, chicken , onion, garlic,and celery.Cook for 25-30 minutes. Drain and pour broth into different medium-sized pot. Discard onion, garlic, and celery.Tear chicken apart into small pieces and add to the pot. Grate carrot into the broth. Add pasta.Cook roughly for 15 minutes and serve.

Homemade Rice Pudding ~ Arroz Doce
Ingredients:
1 cup of Carolina rice
1/2 a cup of water
2 cups of whole milk
1/3 cups of heavy cream
1 cup of sugar
1/3 of a lemon peal
1 stick of cinnamon
2 eggs
1/2 a teaspoon of vanilla
Get a medium-sized pot and pour the whole milk and the lemon peal. Bring it to boil and add the heavy cream. Stop the stove and put to the side.
Wash and drain the rice. Put into a separate large-sized pot.Add the cinnamon stick to the pot. Pour the water and let the rice soak in the water. Afterwards, pour the pot of milk in the rice. Let it cook for 25 minutes uncovered.Then add the sugar and cook for 10 minutes. Meanwhile,crack the two eggs and beat the yolk. Discard the whites. Pour and mix.Cook for 5 minutes. Take out the stick of cinnamon and serve.
